Berries and Cream: An Anti-Inflammatory Twist on a Classic British Dessert


Who doesn’t love some juicy berries covered in cream for a refreshing dessert or a tasty snack?!! When I lived in the UK for five years, we ate a ton as it's quite a common summer treat!


I’ve got a great inflammation reducing, EASY recipe for you this week! You’ll be able to grab all the ingredients at any grocery store and create this delightful little culinary masterpiece in minutes!


Quick info session on berries. Berries are full of anti-inflammatory goodness. They are packed with antioxidants, bio-flavonoids as well as being a wonderful source of fiber which helps to balance blood sugar and heal insulin resistance.

Berries of all types can help regulate cholesterol and works to strengthen your immune system as well as they are high in naturally occurring vitamin C (so not a synthetic form).


Now, on to the good stuff!

Berries and Cream

Ingredients:

Frozen berries (yes—frozen. This is key to the whole shebang!)

Full fat canned Coconut milk for added anti-inflammatory help OR heavy whipping cream* if you do okay with dairy.

If you like things extra sweet consider adding some Swerve or THM Gentle Sweet to your berries.


Directions:

  1. In a bowl, place 1/2c to 1c of frozen berries (would suggest starting with 1/2c and seeing how your blood sugar does with this).

  2. Sprinkle with Swerve or Gentle Sweet to taste.

  3. Shake the canned coconut milk up well to make sure it’s all incorporated.

  4. Pour 2-3 tablespoons of coconut milk or heavy whipping cream over the frozen berries. This causes the cream to freeze up and it turns into a sort of berry ice cream effect in a few seconds!

  5. Let sit for about 2 minutes and enjoy!


*Check to make sure your HWC doesn't have carrageenan in it. This has been linked to cancer and is inflammatory to your body.
