The Best Dang Coleslaw (low fat, low carb)
I threw this recipe together for our church small group this past weekend, and it turned out so well I thought it would be unkind for me to not share it with YOU!
This takes less than five minutes to throw together, and is so tasty that even people who are not living the sugar free life that you are will enjoy it! In fact, they won't even be able to tell the difference!!!
It's also full of gut-healthy ingredients like apple cider vinegar and cabbage. These two things feed the good bacteria in your gut which in turn helps regulate a whole host of other systems in your body--like insulin and blood sugar regulation!
Half a bag of coleslaw mix
1T avocado mayo
1T THM Gentle Sweet (can use Swerve as a sub)
1/2 T apple cider vinegar
salt and pepper
Mix together and chill until ready to serve!
This recipe is per half bag of coleslaw mix. To make the whole bag simply double all the other ingredients.
When to Serve This
This easy-to-throw-together coleslaw makes adding nonstarchy vegetables to any meal a breeze. Adding in nonstarchy veggies adds fiber into your daily food which helps prevent blood sugar spikes. Eating this before you eat any carbs will give you great resistant starch which lowers blood sugars.
